Arecanut for preparation of kalipak is harvested at 5 - 6 months.
Kali is the extract obtained during the boiling of tender nuts. Usually, the same water is used for boiling 3 to 4 times. After boiling the areca nut is given a coating with Kali to improve colouring. Kali coating is repeated to get a glossy appearance. Kali contains many polyphenols.
Kalipak is consumed mainly in South India.
