Pectin is measured by Jelmeter.
A jelmeter is a graduated glass tube with an opening at each end. It is used to determine the amount of pectin in fruit juice. The content of pectin can be measured by calculating the weight of the precipitation.
It is an index of the amount of sugar to be used. The rate of flow of the juice through this tube is used as a measure of the jellying power of the juice.
