The preservative used in the canning of mango pulp is Potassium metabisulphate.
Mango pulp was preserved with the addition of potassium sorbate (PS), sodium benzoate (SB) and citric acid in combination while potassium metabisulphite (KMS) is used alone.
Mango should be packed relatively tightly in the jars because the fruit will shrink in the canner during processing.
