The traditional toddy is made from coconut palm sap which is left overnight to ferment. It is a sweet-sour drink with low alcohol content.
Coconut tapping refers to the process of collecting the milky white sap from the flower blossom, not the coconut itself. Toddy tapping begins when the tapper starts beating the flower for three days. Once beaten, the flower is then cut to allow the sap to drain.
