The chemical commercially used for the prevention of sprouting in potatoes during storage is CIPC.
CIPC [Isopropyl N-(3-chlorophenyl) carbamate] is the most widespread and commonly used sprout suppressant on potatoes when stored at 8 - 12°C.
CIPC is primarily an herbicide that was introduced in the year 1951.
All of these chemicals are federally regulated and applied by licensed applicators. These preservatives are only applied to the skin of the potato and are washed off by the consumer before consumption.
