Maize plant stores its nutrient in the form of storage protein in the seeds that are named Ziens, these Zeins are a group of alcohol soluble polypeptides which are synthesized in the developing endosperm in the seed.
In general protein content in maize is low i.e. about 9.1%, oil is 4.4% and a high percentage of starch i.e. about 73.4%.
