FPO specification for the concentration of SO2 in squashes is 350 ppm.
The toxicity of SO2 increases at high temperatures. Hence its effectiveness depends on the acidity, pH, temperature and substances present in fruit juice.
According to FPO, the maximum amount of SO2 allowed in fruit juice is 700 ppm, in squash, crushed and cordial 350 ppm, and RTS and nectar 100 ppm.
