Oleoresin is extracted from chilies.
Oleoresins are semi-solid extracts composed of resin and essential or fatty oil, obtained by evaporation of the solvents used for their production.
It is extracted from finely ground chili or paprika powder. A volatile non-aqueous solvent such as hexane, ether, or ethylene dichloride is added and allowed to thoroughly wet the material. The oleoresin enters into solution with the solvent, forming micella.
