Pithiness is formed by the collapse of parenchymatous tissue/cells in root tissue caused by excessive root growth in comparison with the corresponding assimilation ability of leaf tissue. It is the sign of senescence and its degree varies depending on the varieties to varieties.
Pusa Kanchan is a selection from the cross between Asiatic Red × Golden Ball.
Its roots are round, medium-sized, skin red and flesh light yellow. It is excellent in taste and flavour. Roots do not develop pithiness even if harvesting is delayed.
