Spongy tissue is a serious problem of the Mango cultivar Alphonso.
Spongy tissue is a physiological ripening disorder in 'Alphonso's mango.
The spongy tissue develops as yellowish white corky patches with or without air pockets in the breakdown tissues.
It is caused by the shift of the seed to germination mode inside the fruit where it absorbs nutrients from the surrounding fleshy part of the fruit, making it appear white and spongy.
