Vitamin A remains most resistant to heat treatment of milk.
Milk is a natural source of calcium, vitamin B12, riboflavin (vitamin B2), phosphorus and potassium. It also contains smaller amounts of other nutrients including vitamin A, niacin, folate, vitamin B6, vitamin D, magnesium, selenium and zinc.
Vitamin B2 and the fat soluble vitamins A, D, E and K are very heat stable and, therefore, are not affected by heat treatment and pasteurization.
