We would just use 'very' before the adjective here, so 'Vijay is very sorry about ...'
We use 'very much' before -ed forms in passive voice verb phrases with verbs such as enjoy, hate, know, like, love, eg 'She is very much liked at school.'

We also use 'very much' to add emphasis to comparative adverbs and adjectives eg 'Sita is very much better than Geeta at basketball.'
